Now he has turned his passion into a real job. 'Hiking along the paths, nature lovers are enchanted by the charm and magical atmosphere that the Sibillini Mountains evoke,' says Francesco. 'Anyone, at any age, can become a hiker. Even those who are not trained and just want to take a quiet walk in a fairytale world... all they need to know is which are the right paths!' The Pantani near Accumoli or the hills that frame the Pian Grande and Pian Piccolo near Castelluccio, for example, offer breathtaking views and unimaginable feelings. Those who are more adventurous and accustomed to walking, on the other hand, can venture over the highest ridges, above 2000 meters, to Monte Vettore, the highest peak with its 2476 meters; Palazzo Borghese, the beautiful summit of Monte Sibilla; and Monte Bove where 'if you know where to look, you can always meet some of the beautiful Apennine chamois that live there,' recalls Francesco. And the Sibillini Mountains retain their charm in every season. Even in winter it is possible to take beautiful walks, using snowshoes when the snow falls to reach a fairy tale kingdom. 'The interest for winter hiking is constantly growing,' says Francesco. 'People are curious about it, even when it comes to proposals that sound ‘extreme’ such as walks from sunset to nightfall in which, after enjoying the colours of dusk, you walk through woods and clearings among thousands of footprints from wild animals under a blanket of stars, or in the moonlight, and you discover that stars don’t fall only in August.' - Food plays an important role in building a more sustainable development model for all. Small changes in our habits can generate great “revolutions” around us. We feel this responsibility and we want to make our contribution together with those who, like us, share this approach
- To enhance our gastronomic identity, contribute to the relaunch of the post-earthquake economy, reduce the production of packaging waste and the air pollution generated by the transport of goods, we will purchase all the raw materials that we will be able to obtain from local quality producers to make our recipes.
- To add flavor to our dishes, reduce the waste of food, electricity and the use of plastic, we will purchase products for which freshness and fragrance make the difference. We will do it at the last useful moment and only in the necessary quantities. For this we need to make reservations and menu choices at least 24 hours before arrival at the restaurant.
- To make the Vespasia project sustainable also for all the people who interact with it: from those who visit us, to the small producers, to the professionals who work here and their families, we need a small investment of time by the our Guests in advance. - Our suppliers must ensure, in addition to a high quality of their products and a fair price, also the sustainability of the production cycle that generates them.
- Legumes, cereals and vegetables come from our Vallaccone farm in Norcia and from our farming friends in the Sibillini Mountains National Park.
- The meats are all strictly local, of high quality and come from farms that focus on animal welfare. We go to visit them personally several times during the year.
- Our recipes are born from the selection of the best products of our territory and from a study of traditional local dishes. We then want to enrich this journey into taste by adding, when useful, the fruits of our life adventures, our sensitivities, in order to make the experience with our dishes satisfying for our guests.

Palazzo Seneca was built in the 16th century by the homonymous family from Piedivalle, a town near Preci, whose inhabitants were famous as skilled wood carvers. Among their works is the wooden choir of the Basilica of St. Benedict, which no longer exists in the church, and the choir in the Abbey of St. Eutizio. In fact, one of his mottos is ‘Nature offers and I appreciate it’ and this turns into a love for the treasures of our forests that has always prompted him to go for walks in search of mushrooms, blackberries, raspberries and other kinds of wild produce. ‘I like preparing special things like ivy and wildflower honey, or blackberry, raspberry and quince jams for dinners with my family and friends. However, black truffle is my true passion.’ Most of the credit that goes to the ‘cavatore’ (truffle hunter) is due to dog training. There is no specific breed for this job, and often the best dogs are mixed breeds, small in size but strong and agile as there is a lot of walking involved. The training begins when they are puppies. As the instinct of dogs is to hunt, it is important to see if there is a ‘champion’ among the litter of puppies. To begin with, it is enough for the dog to show an interest for truffle, which can be demonstrated by the sense of smell and developed through play for about one month. Then one can continue developing the dog’s skills by hiding the tuber on the surface – behind a stone, for example – or just below ground level, still making the training feel like a game and rewarding the dog for every success. This phase should last for another 4 months. From the fifth month the trainer should start hiding the truffle a little deeper underground so that the dog develops the habit to dig independently, but rewarding the dog still maintains its importance. When positive results start showing the training can move to the woods where it gets harder. The sense of smell is trained much more in this phase as searching without the help from the master is developed. The smells, furthermore, are those of nature and of the wildlife that passes by in search of truffles (foxes, porcupines, boars, etc.), and that make the dog’s hunting instincts prevail.
