The “Vespasia” project was created and is operated by Vincenzo and Federico Bianconi, the latest generation of a family of enthusiast restaurateurs, with a tradition that began in the 1850s and continued without interruption. This is a tribute to this land and its immense culinary richness. The restaurant “Vespasia” is located in the Palazzo Seneca Relais & Château, a noble palace dating back to the 1500s in the artistic heart of Norcia, a few steps from the main square of St. Benedict, between the Castle of Vignola and the convent of St. Francis, the latter transformed in recent years into a stylish auditorium. The restaurant “Vespasia” gives out a sense of harmony and peace. Here innovation meets tradition, treating it with respect a child should treat his father. Everything at the “Vespasia” tells the story of this land – style, colours and flavours that are simple but at the same time intense.
Details always make the difference, and therefore they were treated with great love and attention. At the “Vespasia” the Guests can even choose their seat between comfortable padded chairs and large leather armchairs, both created by master Umbrian craftsmen. The table can be in the more intimate ‘black’ fireplace room and including wine, candles and wooden furniture, or between the lemon grove and the old stables, overlooking the inner courtyard. When the weather permits, guests can eat outside where, in addition to peace and tranquility, they can enjoy the view of the towers, bell towers and, in the distance, of the Sibillini Mountains. The scent of aromatic herbs from the garden completes a top-quality location.
But it is at night that the restaurant “Vespasia” expresses its greatest charm. The candles are lit, the lights dimmed, the staff consistently checks that everything is perfect – it’s time for the show! The silverware, the crystal glasses and the spotless table linen are overshadowed as the dishes prepared by the Chef Fumiko Sakai and Fabio Cappiello, the real protagonists of the restaurant “Vespasia”, arrive. The recipes you can taste at the “Vespasia” stand out for their elegance, refinement, tradition, creativity and real professional ethics. Vespasia for Sustainability
The “Manifesto” of the Vespasia restaurant contains the key elements and the values on which we have built our choices, our cuisine and relationship with our land. It is our contribution to a better, more aware and sustainable world.
- Food plays an important role in building a more sustainable development model for all. Small changes in our habits can generate great “revolutions” around us. We feel this responsibility and we want to make our contribution together with those who, like us, share this approach
- To enhance our gastronomic identity, contribute to the relaunch of the post-earthquake economy, reduce the production of packaging waste and the air pollution generated by the transport of goods, we will purchase all the raw materials that we will be able to obtain from local quality producers to make our recipes.
- To add flavor to our dishes, reduce the waste of food, electricity and the use of plastic, we will purchase products for which freshness and fragrance make the difference. We will do it at the last useful moment and only in the necessary quantities. For this we need to make reservations and menu choices at least 24 hours before arrival at the restaurant.
- To make the Vespasia project sustainable also for all the people who interact with it: from those who visit us, to the small producers, to the professionals who work here and their families, we need a small investment of time by the our Guests in advance. We are committed to using it to the fullest, with the aim of offering everyone a more informed experience.
- Our suppliers must ensure, in addition to a high quality of their products and a fair price, also the sustainability of the production cycle that generates them.
- Legumes, cereals and vegetables come from our Vallaccone farm in Norcia and from our farming friends in the Sibillini Mountains National Park.
- The meats are all strictly local, of high quality and come from farms that focus on animal welfare. We go to visit them personally several times during the year.
- Our recipes are born from the selection of the best products of our territory and from a study of traditional local dishes. We then want to enrich this journey into taste by adding, when useful, the fruits of our life adventures, our sensitivities, in order to make the experience with our dishes satisfying for our guests.

Chefs
Fumiko is a passionate, kind and hardworking Chef of Japanese origin. She has been in Italy for 20 years and has built his professional career and in- depth study of cooking in the “Bel Paese” by working alongside prestigious Chefs of important restaurants such as: L’Antica Corona Reale, Da Caino and for 7 years at the Torre del Saracino as Gennaro Esposito’s Sous Chef. She has also studied French and Northern European cuisine. Fumiko arrived in Norcia because she shared the ambitious gastronomic project of the Bianconi brothers. She wants to make it happen with them, making this project hers too.
Fabio is an Apulian Chef, now a
Nursino by adoption. He grew up in the restaurants of the Bianconi family in Norcia, where he has been working for over 15 years. He has had a tough apprenticeship and has earned, year after year, the trust of his colleagues and the Family. In 2018 he became Sous Chef at the Michelin-starred Vespasia Restaurant. He participated in haute cuisine events in Italy and Asia.
